Including nearly 20 different botanicals ranging from savory to sweet, Hypatia is proofed with Napa Valley spring water from the Coppola family’s estate and mixed with organic cane sugar and cochineal extract for authentic carmine coloring.

Aroma

This vibrant-hued amaro is immediately punchy on the nose with notes of lemon peel, orange blossom, sweet marjoram and summer savory thyme. Drawing the drinker in with the aromas of savory toasted Japanese mushrooms, sweet pomegranate and cranberry compote.

Taste

On entry, notes of bitter blood orange peel, while a lemon verbena floral lift coats the mouth. Followed by maraschino cherry, orange black tea spice, savory mushroom and toasted walnut weight filling out the mouth. The palate has a “grown-up” bittersweet taste, achieved by the addition of sugar to balance the bitterness of the botanicals.

Negroni

Ingredients

1 oz Ada Lovelace Gin
1 oz Hypatia Rubi Amaro
1 oz sweet vermouth
Garnish: orange peel

Directions

Add Ada Lovelace Gin, Hypatia Rubi Amaro, and sweet vermouth to a shaker tin filled with ice, and stir until well-chilled. Strain into a rocks glass filled with ice cubes. Garnish with an orange peel.

Ingredients

2 oz Hypatia Rubi Amaro
3 oz Champagne or other sparkling wine
1 oz soda water
Ice
Garnish: lemon wheel

Directions

Fill cocktail glass with ice, add Hypatia Rubi Amaro. Top with Champagne or sparkling wine of your choice, and soda water. Garnish with a lemon wheel.

Ingredients

1 ½ oz sweet vermouth
4-6 oz soda water
Garnish: orange twist

Directions

Fill a highball glass with ice, add Hypatia Rubi Amaro and sweet vermouth. Top with the soda water and stir gently to combine. Garnish with an orange twist.

Meet Hypatia

Greek. c.350 - 415 AD
The first woman to be recognized as the foremost philosopher, mathematician, and astronomer of ancient times, Hypatia (high-PAY-shia) was born and raised in Alexandria, the Egyptian city that by the mid-4th century A.D. was a world-renown intellectual hub. Such an environment was ideal for Hypatia who established an esteemed stature by editing and writing commentaries on many ancient scientific texts that would have been otherwise lost to posterity.

Hypatia’s charismatic self-assurance allowed her to navigate circles outside that of the classroom by participating in civic affairs and meeting with foreign dignitaries. However, unbeknownst to her, she had become the scapegoat of a feud between two political rivals, one of whom spread vicious rumors that ultimately led to her murder. Hypatia’s story-turned-legend has been the inspiration for a trove of literary works, paintings, and sculptures ever since the 18thcentury. On a more modest scale, Great Women Spirits joins in celebrating Hypatia’s dedication to the free pursuit of knowledge by naming our Rubi Amaro in her honor.
